Any precedent for a grey shirt joining the team after 1 semester?

Seems like it should be legal and not a problem.
He probably has more matches than anyone else on the team so far as well.

It might depend on the admissions process and the college at Cornell to which he applied. If he was admitted and was given permission to defer for a year, it might be possible to petition to start in January. If he was accepted but admission was conditioned on completing certain courses first, like 2 semesters of biology, that might be a bar to a January start. Lastly, the college or program to which he was accepted might not allow any student to start in January because of course sequencing.

Either way, starting in January would mean he would have to graduate in December unless he took another semester off later. In the Ivy League, you can't plan that up front unless you do it on the down low. Student athletes need an academic or health, medical or financial reason to take a leave of absence and extend eligibility.

He was admitted to Dyson, and then deferred.

If he is going to Dyson, from an academic perspective, there is no way he should start in January. I know, I taught there for 40 years.
